Here’s how to make the leap. To complete this How-To you will need: 2 1/2 c. all-purpose flour, plus extra for roll 1/2 tsp. salt 1 c. vegetable shortening, lard, or butter, chilled 1/4 c. plus 2 tbsp. ice water A mixing bowl A fork A dough blender or food processor A rolling pin An 8-inch pie pan Two sheets of wax paper A sharp knife Step 1: Mix flour and shortening Whisk the flour and salt together in a bowl. Add the shortening, and with a dough blender, or in a food processor, cut the shortening into the salted flour until the mix is full of crumbly, pea-size pieces. Step 2: Add water Drizzle 3 tablespoons of ice-cold water over the dough, and mix it in with a fork until the dough is moistened, adding more water, five or six drops at a time, just until the dough sticks together. Form a ball, split the ball in half, and wrap the two balls separately in plastic wrap. Put them in the refrigerator. To complete this How-To you will need: 1 c. all-purpose flour ¼ tsp. salt 1 tbsp. shortening 6 tbsp. cold butter, cut into 1- inch cubes 2 tbsp. ice water Dry beans or uncooked rice 1 c. milk 2 large egg yolks ⅓ c. granulated sugar 2 tbsp. cornstarch 2 tsp. orange liqueur 1 tsp. vanilla extract 3 c. assorted berries Apricot jam Confectioners sugar A food processor with blade attachment A 9-inch tart pan with removable bottom A cooling rack A pre-made piecrust (optional) Step 1: Make crust Mix the flour, salt, shortening, and butter in the food processor for 2 seconds to form fine crumbs. Add the ice water and process for 2 more seconds. Remove the dough, shape it into a ball, and wrap it in plastic wrap. Refrigerate for 30 minutes.
